Mir ist z. B. unklar, warum Du \textit und den mathematischen Modus zusammenwirfst. Wenn es sich bei beiden Bezeichnungen um so etwas wie Variablen handelt, hätte ich dafür eher an Schreibmaschinenschrift (\texttt) gedacht.
Teste Deine Tabelle in solchen Fällen nur mit der Beschriftung und der ersten Zeile des Inhalts, um zu sehen, ob zumindest das funktioniert.
